The name of Cubertoirata
appears at the XIth century during the delimitation of
the territories belonging to the abbey of Gellone, in
Saint-Guilhem-le-Désert (Herault). Couvertoirade
before the installation of Templars, belonged to The
abbey close to Nant, in the valley of the dourbie. The
Primitive village with its church which, only, always
exists, but Ruined, was behind the hill at the top of
which a windmill is. Templars were installed later on
the current site, at the end of the 12th century only,
on the order of the Sainte-Eulalie commander. They built
there a castle in this place isolated and far from the
commandery. The choice of the site has to proceed, at
least partly, concern of protecting the roads and close
toll. For that, they chose a site more favourable than
the old village and raised their castle in a rock chaos
offering natural defences. The castle was completed in
1249. Couvertoirade constitutes for Templars a farming
centre. They cultivated on its grounds of corn, raise
horses (for the war) and of the sheep (for the meat,
the skins, milk). Couvertoirade was one of the system
main parts of Templars whose Larzac, with its cereal
plantations in the south of the platform constituted
one of the great fields. So much that it had been baptized "the
temple plain " .
